Catalog Experience Asset Page Summary View
With the Catalog Experience enabled, every asset overview page defaults to a summary view.
Is there a way to define what characteristics show on the overview?
Is there a way to default to the detail view rather than the summary?

No, you cannot customize anything.
There is an idea on the ideation board for this exact feature. It’s one of the most high-voted feature. It’s in status “Likely to implement” since… 2017.
It’s going to be released any day now. I’m sure. If I had to pick any day, I would say May 4th 2023.
